Bowl of chili topped with shredded cheese, beans, and chunks of chicken

Easy Mexican Chicken Soup Recipe

There’s something deeply satisfying about cooking from scratch.

But there’s also something deeply practical about starting halfway there.

At Rabbit Ridge Farms, we raise animals regeneratively, with care and intention. We believe in transparency. We believe in knowing your farmer. And we believe that real food should fit into real life.

That’s why we created Start with CHICKEN.

It’s exactly what it sounds like — a generous amount of our pasture-raised chicken, slow-cooked, shredded, and packed in rich, nourishing broth inside a 32-ounce quart container.

No fillers.
No mystery ingredients.
No shortcuts you wouldn’t make yourself.

Just a head start.

Because sometimes the hardest part of dinner… is getting started.

Why “Start with…”?

You don’t need another complicated recipe.

You need a foundation.

Start with CHICKEN is designed to be the base for:

  • Soups
  • Enchiladas
  • Pot pie
  • Casseroles
  • Quick skillet meals
  • And more!

You can build something beautiful in 15–20 minutes — and still feel like you cooked.

This isn’t convenience food.
It’s cultivated convenience.

First Recipe in the Series: Mexican Chicken Soup

This one is warm, simple, flexible, and incredibly forgiving — perfect for busy weeknights or slow Saturdays.

Ingredients

  • 1 container Start with CHICKEN
  • 1 can tomatoes with green chilies (I used Rotel)
  • 1 cup corn (frozen, canned, or fresh off the cob)
  • 1 small onion
  • 1 small bell pepper
(I used 1½ cups frozen onions and peppers — because real life.)
  • 1 tablespoon olive oil
  • 1 tablespoon RRF S&P (or your favorite salt and pepper blend)

Optional:

  • 1 can black beans, drained and rinsed

Toppings:
Shredded cheese, avocado, sour cream, chopped green or white onion, cilantro

Instructions

  1. Heat olive oil over medium-high heat.
  2. Sauté onion and bell pepper until soft and fragrant.
  3. Add your container of Start with CHICKEN, tomatoes with green chilies, corn, black beans (if using), and RRF S&P.
  4. Bring to a gentle simmer and let the flavors blend together.
  5. Taste and adjust seasoning.
  6. Serve with your favorite toppings.

It reheats beautifully.

If you want it more brothy?
Add another container of RRF chicken broth.

What I Love About This Soup

It tastes like you cooked all day.

But you didn’t.

It’s deeply flavorful from the broth.
It’s hearty without being heavy.
And it scales easily — double it for guests, portion it for lunches, or freeze half for later.

This is what we mean when we talk about making real food accessible.

We aren’t trying to replace cooking.
We’re trying to remove the friction that keeps people from doing it.

The Bigger Vision

Start with CHICKEN is the first in what will become our “Start with…” series — simple, farm-raised foundations that help you cook confidently at home.

Because when you start with something good…
everything built on top of it gets better.

From our farm to your kitchen,
— Angela
