Mexican Chicken Soup


There’s something deeply satisfying about cooking from scratch.

First Recipe in the Series: Mexican Chicken Soup


This one is warm, simple, flexible, and incredibly forgiving — perfect for busy weeknights or slow Saturdays.


Ingredients

  • 1 container Start with CHICKEN
  • 1 can tomatoes with green chilies (I used Rotel)
  • 1 cup corn (frozen, canned, or fresh off the cob)
  • 1 small onion
  • 1 small bell pepper
    (I used 1½ cups frozen onions and peppers — because real life.)
  • 1 tablespoon olive oil
  • 1 tablespoon RRF S&P (or your favorite salt and pepper blend)


Optional:

  • 1 can black beans, drained and rinsed


Toppings:
Shredded cheese, avocado, sour cream, chopped green or white onion, cilantro


Instructions

  1. Heat olive oil over medium-high heat.
  2. Sauté onion and bell pepper until soft and fragrant.
  3. Add your container of Start with CHICKEN, tomatoes with green chilies, corn, black beans (if using), and RRF S&P.
  4. Bring to a gentle simmer and let the flavors blend together.
  5. Taste and adjust seasoning.
  6. Serve with your favorite toppings.


It reheats beautifully.


If you want it more brothy?
Add another container of RRF chicken broth.
